RECIPE: Roti Kukus | Made out of the (steam) pan & the steam oven

When I was a kid, we often used to visit grandpa and grandma. And then the house smelled delicious, because grandma made a nice roti kukus for us. She made that in the most beautiful colors and it was always a party. Of course I would also like to have that same party at home. I always used to make roti kukus in the steamer, but have now also discovered that it is very easy to make in the steam oven.

So I would like to share the recipe with you.

Ingredients:

  • 150 gram self-rising flour
  • 2 sachets of vanilla sugar
  • 150 gram sugar
  • a pinch of salt
  • 4 eggs
  • Coloring: Pandan – green, Cocoa – brown, Rose – pink (brand Koepoe Koepoe or Jo-La)

Kitchenware :

  • Mixer
  • Sieve
  • Pan with lid
  • Colander that fits on the pan
  • Baking paper
  • Dishcloth
  • Spatula

Put the eggs in a bowl together with the brown sugar, vanilla sugar and a pinch of salt. Beat this lightly, about 5 minutes.

Sieve the self-raising flour and carefully fold it through with the spatula. This way the batter stays light.

How to add color:

If you pour some of the mixture into another bowl. And add a green colour, for example pandan essence. Then you can pour it on the bottom or on top of your non-colored mixture. What is also tasty is adding cocoa. Then your roti kukus will turn brown / cream. And if you want to have such a beautiful marble effect then you pour a little color in the middle and poke a skewer in the middle and draw a line or twist to the outside to make a kind of marble drawing.

There are many ways to steam the roti kukus. You can make the roti kukus in a steamer. But there are even more ways to do this. If you don’t have a steamer, you can put it in a colander that fits in a pan. Or as I do now: in the steam oven!

Place the baking paper neatly in a colander. You could cut it round and cut it a bit to the center to make it fit properly in the colander. Pour the mixture in here.

Steampan

Put the pan with water on the fire. The water should not touch the colander when it is hanging in it. Make the water boil. Hang the colander in the pan. And you tie the tea towel around the lid. Close tightly with the lid. Now let it steam for 25 to 30 minutes in the pan

Steamoven

Place the colander in the steam oven. Setting: 100 degrees and steam your roti kukus in the steam oven for 40 minutes.

Then remove the colander from the pan or steam oven. Be careful! Because it is hot. Let it cool for a few minutes. And take it out with the paper. Now you can cut it into pieces. The roti kukus is best warm. Especially with a little butter.
